QUERY: For a digital story for the restaurant section of Food & Wine, I'm looking for U.S. restaurants that make their own soy sauce or tamari — ideally fermented from scratch, but I'd consider alternatives such as unique blends or infusions, like the tuna spine-infused soy sauce at Porgy's in New Orleans.
